The pumpkin, lat. Cucurbita pepo, originates from Middle America and is mainly in Mexico a culture plant for thousands of years. After America has been "discovered" the pumpkin was imported to Europe and Asia, where it is still a popular food vegetable. However, the extraction of pumpkinseed oil out of a mutant pumpkin (Styrian Oil Pumpkin, lat. Cucurbita pepo var. styriaca, auch als var. oleifera bezeichnet) with ist non-stringy seed skins started a long time after. During the 18th century some knew about the usability of the pumpkin seed. A reference book from 1739 writes about the pumpkin seed: "... it is used often for making cooling emulsions and milks, also other drinks and soups. It is pressed a white, sweet oil out of it which makes a smooth skin ..." Obviously from the same year is the first documented expression of "pumpkin oil". Three years later, 1742 a last will document mentions the heritage of 14 pounds of pumpkin oil in the Styrian village Rassach. 1773 ordered the Austrian Empress Maria Theresia that pumpkinseedoil should not serve as a normal food but belongs to chemist stores to produce "ointments and plasters". Der Speisekürbis, lat. Cucurbita pepo, stammt aus Mittelamerika, und ist im besonderen in Mexiko seit Jahrtausenden Kulturpflanze. Nach der Entdeckung Amerikas wurde der Speisekürbis auch nach Europa und Asien eingeführt, wo er bis heute ein beliebtes Gemüse darstellt. Die Gewinnung von Kürbiskernöl aus einem speziellen Mutanten (Steirischer Ölkürbis, Cucurbita pepo var. styriaca, auch als var. oleifera bezeichnet) mit nichtverholzenden Samenschalen begann jedoch viel, viel später. Um 1739 war die Nutzbarkeit des Kürbiskerns jedenfalls bereits bekannt. In einem Fachbuch aus diesem Jahr wurde über den Kürbis"saamen" unter anderem gesagt: "... man brauchet denselben offt zu den kühlenden Emulsionen und Milchen, wie auch zu anderen Träncken und Suppen. Es wird auch ein wiesses, süsses Oel daraus gepresset, welches eine linde, weiche Haut machet, und auch sonsten erweichet." Aus dem gleichen Jahr stammt auch die offensichtlich erste dokumentierte Erwähnung von "Kirbis Öell". Und drei Jahre später, 1742 wurden laut einem Nachlaßdokument im steirischen Rassach "14 Pfund Kürbes Öell" vererbt. 1773 befahl Maria-Theresia, dass Kernöl nicht als gewöhnliche Speise dienen sollte, sondern in die "Apothecken" zur Erzeugung von "Salben und Pflastern" gehöre. Nach Aufzeichnungen dachte man Anfang des 18. Jahrhunderts neben der kulinarischen und medizinischen auch über die militärische Nutzungsmöglichkeit von Kürbiskernöl nach - und zwar als Wagenschmiere. Der k.u.k. Offizier, der damals diese Idee aufbrachte, wollte vor allem den 10%igen Anteil an gesättigten Fettsäuren nutzen, die auch heutzutage noch das Ausgangsmaterial für Schmieröle bilden. Kernöl wurde in dieser Zeit mit "Pressbäumen" hergestellt. Vor dem Ersten Weltkrieg war Kernöl keine gewöhnliche Handelsware sondern diente nur der Selbstversorgung der Bauern. Mit der zunehmenden Industrialiserung kamen dann die ersten hydraulischen Ölpressen auf. Heute werden allein in der Steiermark jährlich über 2.000 Tonnen Kernöl gepresst und zu den unterschiedlichsten Preisen und in verschiedenen Qualitätsstufen weltweit vertrieben. Which pumpkin sort delivers the seeds? To get 100% pure pumpkinseed oil you should pay attention to the indication. Only oil from the Styrian Oil Pumpkin (Cucurbita pepo var. styriaca) is allowed to bear the certificate "100% pure pumpkinseed oil. Imported, cheaper, skinned pumpkin seeds do not make the same taste and the same quality. Pumpkinseed oil or pumpkinseed salad oil? Austrian law allows mixing different kinds and qualities of oil if it is clearly declared on the bottle. Of course, also pumpkinseed salad oil has its right to exist. It tastes more smoothly than pure pumpkinseed oil. Ist viscosity is naturally lower. And for the frequently use (on salads) it is also a question of costs. This fact is however a temptation for many "black sheeps" in the pumpkinseed oil branch. Though it is possible to prove mixtures with other, cheaper oils with a so called "Discriminance analysis", there are again and again dealers who try to sell cheap salad oil as pumpkinseed oil. However, this is a kind of fraud and is and luckily those cases are followed up legally. Welcher Kürbis liefert die Kerne? Um garantiert reines, 100%iges Kürbiskernöl zu bekommen, das nicht verdünnt oder verschnitten wurde, sollten Sie auf die Bezeichnung achten. Nur Öl, das hier aus dem schalenlos gewachsenen Steirischen Ölkürbis (Cucurbita pepo var. styriaca) erzeugt und unverfälscht abgefüllt wird, darf das Zertifikat "100% reines Kürbiskernöl" tragen. Importierte, billigere beschalte Kürbiskerne bringen nicht denselben Geschmack und dieselbe Qualität. Der Steirische Ölkürbis wächst hier langsam, dafür umso besser im Geschmack. Da aber die Kernerträge dadurch manchmal um 30% niedriger sind als in ausländischen Gebieten, kaufen leider etliche Bauern auch billige Kerne aus dem Ausland, mischen es mit ihren Kernen und verkaufen das Öl daraus als "Steirisches Kürbiskernöl." Das schlägt sich dann im Preis und im Geschmack nieder. Kürbiskernöl oder Salatöl? Der österreichische Lebensmittelcodex erlaubt das Beimischen von anderen Speiseölen, wenn es ausdrücklich auf der Flasche als solches deklariert ist. Natürlich hat auch ein Salatöl seine Existenzberechtigung. Es schmeckt wesentlich sanfter, als das reine Kürbiskernöl, ist naturgemäß viel dünner als reines Kürbiskernöl und für den häufigen Gebrauch (eben auf Salaten) ist es auch eine Kostenfrage. Genau dieser Umstand stellt jedoch für viele "schwarze Schafe" in der Kernölbranche eine Verlockung dar. Obwohl es über eine sogenannte "Diskriminanzanalyse" möglich ist, Vermischungen mit anderen, billigeren Ölen nachzuweisen, gibt es immer wieder Händler, die versuchen, billiges Salatöl als Kernöl zu verkaufen. Das ist jedoch Betrug und wird zum Glück auch rechtlich verfolgt und bestraft. Auszug aus dem österreichischen Lebensmittelcodex: 1.3.5 Kürbiskernöl Kürbiskerne, die Samen des gewöhnlichen Feldkürbis Cucurbita pepo L. u.a., liefern, wenn sie geschält und gepresst werden, ein gelbes Öl. Werden diese Kerne jedoch heiß gepresst, resultiert ein dunkel gefärbtes, dichroitisches Öl, das im durchfallenden Licht rotbraun erscheint. 1.3.5.1 Das in Österreich, vor allem in der Steiermark hergestellte Kürbiskernöl, wird überwiegend aus den schalenlos wachsenden Kernen des Steirischen Ölkürbisses (Cucurbita pepo styriaca) gewonnen. Diese werden vor dem Pressen stets einem Röstvorgang unterzogen. Die Zugabe von wasser und Salz als Presshilfe ist statthaft. Je nach der Intensität des Röstvorgangs kann es zu einem mehr oder weniger ausgeprägten Röstgeschmack kommen. Zur Erzeugung von Steirischem Kürbiskernöl ist ein langsames Erwärmen mittels Rührwerk vor dem Pressen erforderlich, wodurch der Wassergehalt deutlich abgesenkt wird und der typische Geschmack entsteht. 1.3.5.2 In Verbindung mit "Kern-" oder "Kürbiskern-" in der Sachbezeichnung, zB "Kernöl", "Kürbiskernöl", "Bauernkernöl", "Steirisches Kernöl", mit einem Hinweis "echt" oder "100%ig" oder mit Kürbisabbildungen ist immer reines, durch erste Pressung hergestelltes Kürbiskernöl zu verstehen. 1.3.5.3 Ein aus Kürbiskernöl durch Verschnitt mit anderem Speiseöl hergestelltes Öl wird als "Salatöl" (Speiseöl, Tafelöl) bezeichnet. Der Prozentanteil an Kürbiskernöl wird deklariert. Bei solchen durch Verschnitt von Kürbiskernöl mit anderen Speiseölen hergestellten Ölen, die sich in der dunklen Farbe nicht von reinem Kürbiskernöl unterscheiden, darf durch die Bezeichnung, wie zB "Steirisches Salatöl", oder Abbildungen nicht der Eindruck erweckt werden, daß es sich um reines Kürbiskernöl handelt. Oils are considered cold pressed, if they are not heated over 60 °C (140 °F). for the production of pumpkinseed oil the seed mash is heated up to approximately 58 to 65 °C (136 to 149 °F).
