Consistency describes the physical flow and texture properties of a food.

In the context of Styrian pumpkin seed oil: At room temperature the oil is thicker than many other vegetable oils – a typical characteristic of this product. The viscous consistency results from the high proportion of long-chain unsaturated fatty acids as well as from the products of the roasting process. In the cold the oil becomes even more viscous; when warm it flows more easily.
