Harvest means bringing ripe oil-pumpkin fruits and their seeds in from the field.
Depending on the weather, ripe Styrian oil pumpkins are harvested from mid-September to mid-October. As a rule by machine; by hand only in exceptional cases. The seeds are washed and dried immediately afterwards until the water content is only 6 to 8 percent. Cutting fruit open and taking seeds out by hand is small-scale or historical, not today's standard.
