Xanthophylls are yellow to orange plant pigments in the carotenoid group. Unlike carotenes, they contain oxygen; well-known examples are lutein and zeaxanthin.
In the context of Styrian pumpkin seed oil: Together with chlorophyll and other carotenoids (such as beta-carotene), coloured plant compounds contribute to the appearance of seeds and oil. In the oil, fat-soluble pigments are present in small amounts. The characteristic dark green colour comes mainly from chlorophyll.
